Both products are handcrafted using high-quality pork, seasoned with simple natural ingredients, and matured according to traditional methods. The Gambo cut, obtained from the lower section of the pork leg, is aged for at least 24 months and offers a firmer texture and a more savory, rustic character. Guanciale, derived from the pork cheek, provides an intense aroma, rich flavor, and exceptional softness after a minimum 4‑month maturation.
